Instructions

In a large skillet, heat olive oil and cook sausage until browned. Remove and set aside.

In the same pan, sauté onion, garlic, and bell peppers or spinach until softened.

Stir in the orzo, letting it toast lightly. Add diced tomatoes and broth, bring to a simmer.

Return sausage to the pan and cook until orzo is tender and the liquid is mostly absorbed.
