Instructions

Preheat oven to 425°F (220°C). Toss sweet potato fries with olive oil, smoked paprika, garlic powder, and salt. Spread on a baking sheet and roast for 25–30 minutes, flipping halfway through.

Meanwhile, coat chicken with olive oil, lime juice, and seasonings. Grill or pan-cook on medium-high heat for 6–8 minutes per side until cooked through. Let rest, then slice.

For the guacamole, mash avocados roughly in a bowl. Stir in red onion, cherry tomatoes, cilantro, lime juice, salt, and pepper. Keep it chunky.

Assemble the dish with a bed of sweet potato fries, grilled chicken slices, and a generous scoop of guacamole.

Notes
