Description

Lemon Pizza is a bright and unexpected twist on traditional pizza — combining creamy cheeses, thin lemon slices, herbs, and sometimes a hint of garlic or honey for balance. It’s tangy, savory, and surprisingly addictive. Perfect for spring or summer, this pizza is light yet full of flavor.

 


Ingredients

  • 1 ball of pizza dough (store-bought or homemade)

  • 1/2 cup ricotta cheese

  • 1/2 cup shredded mozzarella

  • 1/4 cup grated Parmesan

  • 1 lemon, thinly sliced (seeds removed)

  • 1 tsp olive oil

  • 1 clove garlic, minced (optional)

  • 1/2 tsp dried thyme or Italian seasoning

  • Salt and black pepper to taste

  • Optional: drizzle of honey, fresh arugula, or crushed red pepper


Instructions

  1. Preheat oven to 475°F (245°C) and place a pizza stone or baking sheet inside to heat.

  2. On a floured surface, stretch the dough into a 10–12 inch circle.

  3. In a small bowl, mix ricotta with garlic (if using), salt, pepper, and thyme.

  4. Spread ricotta mixture over the dough, leaving a 1-inch border.

  5. Top with mozzarella and Parmesan, then arrange thin lemon slices evenly over the top.

  6. Drizzle with olive oil and season with a bit more pepper.

  7. Transfer to the hot stone or pan and bake for 10–12 minutes, or until the crust is golden and cheese is bubbling.

  8. Optional: finish with a drizzle of honey, a handful of arugula, or a sprinkle of red pepper flakes before serving.

Notes

Use Meyer lemons for a sweeter, less bitter flavor. You can thinly slice the lemons with a mandoline for even cooking. This pizza pairs well with a crisp white wine or sparkling water with herbs and citrus. Perfect for brunch or an appetizer spread.
