Ingredients

1 ball of pizza dough (store-bought or homemade)

1 lemon, thinly sliced (seeds removed)

1 clove garlic, minced (optional)

Instructions

Preheat oven to 475°F (245°C) and place a pizza stone or baking sheet inside to heat.

On a floured surface, stretch the dough into a 10–12 inch circle.

In a small bowl, mix ricotta with garlic (if using), salt, pepper, and thyme.

Spread ricotta mixture over the dough, leaving a 1-inch border.

Top with mozzarella and Parmesan, then arrange thin lemon slices evenly over the top.

Notes
Use Meyer lemons for a sweeter, less bitter flavor. You can thinly slice the lemons with a mandoline for even cooking. This pizza pairs well with a crisp white wine or sparkling water with herbs and citrus. Perfect for brunch or an appetizer spread.
