Ingredients

Ground beef or lamb (or a mix)

Roasted Potatoes:

Baby or Yukon gold potatoes, halved

Bowl Base & Toppings:

Cherry tomatoes, halved

Cucumber, diced

Red onion, thinly sliced

Kalamata olives (optional)

Tzatziki Sauce:

Greek yogurt
-
Cucumber, grated and drained

Garlic, minced

Fresh dill, chopped

Lemon juice

Instructions

Preheat oven to 425°F (220°C). Toss potatoes with olive oil, garlic powder, rosemary, salt, and pepper. Roast for 25–30 minutes until crispy.

Mix all meatball ingredients in a bowl and form into small balls. Sear in a skillet with olive oil until browned and cooked through. Set aside.

For tzatziki, mix grated cucumber, yogurt, garlic, dill, lemon juice, olive oil, salt, and pepper in a bowl. Chill until ready to serve.

In each bowl, layer cooked quinoa or couscous, roasted potatoes, spinach, tomatoes, cucumber, red onion, and olives.

Add meatballs and top with a generous dollop of tzatziki.

Garnish with fresh herbs and serve warm or cold.
