Description

A protein-packed bowl bursting with Mediterranean flavors—featuring juicy spiced meatballs, crispy roasted potatoes, fresh veggies, and a creamy homemade tzatziki sauce.


Ingredients

  • Ground beef or lamb (or a mix)

  • Garlic, minced

  • Onion, grated

  • Fresh parsley, chopped

  • Ground cumin

  • Dried oregano

  • Salt and pepper

  • Olive oil

Roasted Potatoes:

  • Baby or Yukon gold potatoes, halved

  • Olive oil

  • Garlic powder

  • Dried rosemary or thyme

  • Salt and pepper

Bowl Base & Toppings:

  • Cherry tomatoes, halved

  • Cucumber, diced

  • Red onion, thinly sliced

  • Kalamata olives (optional)

  • Cooked quinoa or couscous

  • Fresh spinach or arugula

Tzatziki Sauce:

  • Greek yogurt

  • Cucumber, grated and drained

  • Garlic, minced

  • Fresh dill, chopped

  • Lemon juice

  • Olive oil

  • Salt and pepper


Instructions

  1. Preheat oven to 425°F (220°C). Toss potatoes with olive oil, garlic powder, rosemary, salt, and pepper. Roast for 25–30 minutes until crispy.

  2. Mix all meatball ingredients in a bowl and form into small balls. Sear in a skillet with olive oil until browned and cooked through. Set aside.

  3. For tzatziki, mix grated cucumber, yogurt, garlic, dill, lemon juice, olive oil, salt, and pepper in a bowl. Chill until ready to serve.

  4. In each bowl, layer cooked quinoa or couscous, roasted potatoes, spinach, tomatoes, cucumber, red onion, and olives.

  5. Add meatballs and top with a generous dollop of tzatziki.

  6. Garnish with fresh herbs and serve warm or cold.
