  • 1 ½ lbs boneless, skinless chicken breasts or thighs

  • 3 tablespoons olive oil

  • 2 tablespoons lemon juice

  • 2 teaspoons red wine vinegar

  • 3 cloves garlic, minced

  • 1 teaspoon dried oregano

  • 1 teaspoon paprika

  • ½ teaspoon ground cumin

  • Salt and black pepper, to taste

  • 3 cups cooked basmati or jasmine rice

  • 1 cucumber, diced

  • 1 cup cherry tomatoes, halved

  • ½ red onion, thinly sliced

  • ½ cup kalamata olives, pitted and sliced

  • ½ cup crumbled feta cheese

  • Fresh parsley, chopped, for garnish

For the Tzatziki Sauce:

  • 1 cup Greek yogurt

  • ½ cucumber, grated and squeezed dry

  • 1 clove garlic, finely minced

  • 1 tablespoon olive oil

  • 1 tablespoon lemon juice

  • 1 tablespoon fresh dill, chopped

  • Salt and black pepper, to taste


Instructions

  • In a bowl, whisk together olive oil, lemon juice, vinegar, garlic, oregano, paprika, cumin, salt, and pepper. Add the chicken and marinate for at least 30 minutes (or up to overnight).

  • While the chicken marinates, prepare the tzatziki sauce. Mix Greek yogurt, grated cucumber, garlic, olive oil, lemon juice, dill, salt, and pepper until smooth. Refrigerate until ready to use.

  • Heat a grill pan or skillet over medium-high heat. Cook the chicken for 5–6 minutes per side, or until fully cooked and golden brown. Let it rest for 5 minutes before slicing.

  • Assemble the bowls by dividing rice among serving bowls. Top with sliced chicken, cucumber, cherry tomatoes, red onion, olives, and crumbled feta.

  • Drizzle with tzatziki sauce and sprinkle with fresh parsley before serving
