Ingredients
Scale
- 2 boneless chicken breasts, sliced
- 1 tbsp olive oil
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tsp garlic, minced
- 1/2 tsp black pepper
- 1 tbsp fresh basil or cilantro, chopped
- 1 cup cooked jasmine rice
- 1/2 cucumber, sliced
- 1 tbsp green onions, chopped
- Optional: Drizzle of sesame oil
Instructions
- Heat olive oil in a skillet over medium-high heat. Add the sliced chicken breasts and cook for 5-7 minutes, stirring occasionally, until golden brown and cooked through.
- In a small bowl, mix soy sauce, honey, minced garlic, and black pepper. Pour the mixture over the cooked chicken, stirring to coat evenly. Let it simmer for 2 minutes until the sauce thickens into a glaze.
- Stir in freshly chopped basil or cilantro and remove the chicken from heat.
- Assemble the bowls by placing jasmine rice as the base, followed by cucumber slices on one side. Spoon the glazed chicken over the rice.
- Garnish with chopped green onions and an optional drizzle of sesame oil. Serve immediately.
Notes
- For a vegetarian alternative, substitute the chicken with tofu or tempeh.
- Adjust the sweetness by reducing the honey or using a sugar-free alternative.
