Combining tender chicken glazed with a savory-sweet garlic soy sauce, fluffy jasmine rice, and refreshing cucumber slices, it’s a balanced and satisfying one-bowl meal that’s ready in under 30 minutes.

  • 2 boneless chicken breasts, sliced
  • 1 tbsp olive oil
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp garlic, minced
  • 1/2 tsp black pepper
  • 1 tbsp fresh basil or cilantro, chopped
  • 1 cup cooked jasmine rice
  • 1/2 cucumber, sliced
  • 1 tbsp green onions, chopped
  • Optional: Drizzle of sesame oil

Instructions

  • Heat olive oil in a skillet over medium-high heat. Add the sliced chicken breasts and cook for 5-7 minutes, stirring occasionally, until golden brown and cooked through.
  • In a small bowl, mix soy sauce, honey, minced garlic, and black pepper. Pour the mixture over the cooked chicken, stirring to coat evenly. Let it simmer for 2 minutes until the sauce thickens into a glaze.
  • Stir in freshly chopped basil or cilantro and remove the chicken from heat.
  • Assemble the bowls by placing jasmine rice as the base, followed by cucumber slices on one side. Spoon the glazed chicken over the rice.
  • Garnish with chopped green onions and an optional drizzle of sesame oil. Serve immediately.

Notes

  • For a vegetarian alternative, substitute the chicken with tofu or tempeh.
  • Adjust the sweetness by reducing the honey or using a sugar-free alternative.
