Thai Sweet Chili Chicken Pizza is the perfect recipe for those cozy evenings when you’re craving something familiar yet exciting. Inspired by the vibrant flavors of Thai cuisine, this fusion dish brings together the gooey goodness of cheese, the tender bite of chicken, and the sweet-spicy kick of Thai chili sauce, all on a crisp, golden crust.

1 ball of pizza dough (store-bought or homemade)

1/2 cup Thai sweet chili sauce (plus more for drizzling)

1 1/2 cups cooked chicken breast, shredded or sliced

1 cup mozzarella cheese, shredded

1/2 cup smoked provolone or Monterey Jack cheese, shredded (optional)

1/2 red bell pepper, thinly sliced

1/4 red onion, thinly sliced

1/4 cup chopped fresh cilantro

1/2 cup bean sprouts (optional for topping after baking)

1 small carrot, julienned (optional for topping after baking)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon sesame seeds (optional garnish)

Instructions

Preheat your oven to 475°F (245°C). If you’re using a pizza stone, place it in the oven while it preheats to get it piping hot.

Prepare your work surface. Lightly flour a countertop or use parchment paper. Roll out the pizza dough into a 12-inch circle or your preferred shape and thickness.

Brush the crust with olive oil. Sprinkle with garlic powder to add flavor to the outer edges.

Spread Thai sweet chili sauce over the dough. Use the back of a spoon to evenly distribute the sauce, leaving a 1-inch border around the edges.

Layer on the cheese. Start with a generous sprinkle of mozzarella and add provolone or Monterey Jack if using.

Add the toppings. Distribute the shredded chicken evenly across the pizza. Follow with red bell pepper slices and red onion.

Transfer the pizza to the oven. If using a pizza stone, slide the pizza onto it using a pizza peel or an inverted baking sheet. If using a baking sheet, simply place the sheet in the oven.
