Ingredients

  • Flank or skirt steak

  • Olive oil

  • Garlic powder

  • Chili powder

  • Salt and black pepper

  • Avocados, sliced

  • Corn kernels (fresh or frozen)

  • Cooked rice or cauliflower rice

  • Cherry tomatoes, halved

  • Red onion, thinly sliced

  • Fresh lime wedges

Cilantro Cream Sauce:

  • Fresh cilantro

  • Greek yogurt or sour cream

  • Garlic, minced

  • Lime juice

  • Olive oil

  • Salt and pepper


Instructions

  1. Season steak with olive oil, garlic powder, chili powder, salt, and pepper. Grill or pan-sear to desired doneness, then let rest before slicing.

  2. In a dry skillet or grill pan, roast corn until lightly charred. Set aside.

  3. In a blender or food processor, combine cilantro, Greek yogurt, garlic, lime juice, olive oil, salt, and pepper. Blend until smooth to make the sauce.

  4. In serving bowls, layer cooked rice, roasted corn, cherry tomatoes, red onion, avocado slices, and steak strips.

  5. Drizzle with cilantro cream sauce and garnish with fresh lime wedges.

  6. Serve immediately while warm.
