2 boneless, skinless chicken breasts, sliced thin

1 tbsp olive oil

1/2 tsp smoked paprika

1/2 tsp cumin

1/4 tsp chili powder

1/4 tsp garlic powder

Salt and pepper to taste

1 red bell pepper, sliced

1 zucchini, chopped

1 cup broccoli florets

1 cup cooked white or brown rice

1 ripe avocado, sliced

Juice of 1/2 lime

Instructions

In a bowl, toss sliced chicken with olive oil, paprika, cumin, chili powder, garlic powder, salt, and pepper.

Heat a nonstick skillet over medium-high heat. Add seasoned chicken and cook for 5–7 minutes until fully cooked and golden. Remove and set aside.

In the same pan, add bell pepper, zucchini, and broccoli. Sauté for 5–6 minutes until just tender but still crisp.

Warm the cooked rice and divide it between bowls.
