Description

This refreshing salad is a perfect blend of smoked or grilled salmon, fresh cucumber, dill, and a zesty lemon-mustard dressing. Inspired by Scandinavian flavors, it’s light, nutritious, and ideal for summer lunches, brunches, or a quick healthy dinner.


Ingredients

  • 200g smoked or grilled salmon, flaked

  • 1 large English cucumber, thinly sliced

  • 1 small red onion, thinly sliced (optional)

  • 1 tbsp capers

  • A handful of fresh dill, chopped

  • 1 cup arugula or baby spinach (optional)

For the dressing:

  • 2 tbsp extra virgin olive oil

  • 1 tbsp lemon juice

  • 1 tsp Dijon mustard

  • 1 tsp honey or maple syrup (optional)


Instructions

  • Prepare the salmon. If using smoked salmon, slice or flake it. If using grilled, season and cook until flaky, then let cool and flake.

  • Thinly slice the cucumber and onion, and place them in a large bowl with dill, capers, and arugula.

  • In a small bowl or jar, mix olive oil, lemon juice, mustard, and honey until combined. Season with salt and pepper.

  • Pour dressing over the cucumber mix and toss gently.

  • Add salmon pieces and lightly fold in to preserve texture.

  • Plate and garnish with extra dill or lemon zest if desired. Serve chilled.

Notes

  • For a vegetarian version, swap salmon with grilled tofu or avocado.

  • Use mint or tarragon instead of dill for a flavor twist.

  • Keeps well for up to 24 hours if stored separately and chilled.

  • Pair with crisp rye crackers or a light rosé for a complete meal.
