Instructions

Roast or sear the salmon until just cooked and flaky. Set aside to cool slightly.

Boil baby potatoes until fork-tender, then halve them. Blanch green beans until crisp-tender and bright green.

In a large bowl or platter, arrange a bed of mixed greens. Neatly add sections of potatoes, green beans, halved cherry tomatoes, olives, sliced red onion, and quartered hard-boiled eggs.

Flake the salmon and place it over the salad.

Whisk together Dijon mustard, olive oil, lemon juice, minced garlic, salt, and pepper. Drizzle over the salad just before serving.
