A vibrant, protein-packed twist on the classic Niçoise salad, featuring tender salmon, crisp veggies, and a punchy dressing. Perfect for a light but satisfying meal that feels both elegant and easy!


Ingredients

  • Fresh salmon fillets 🐟

  • Cherry tomatoes 🍅

  • Green beans 🟢

  • Baby potatoes 🥔

  • Kalamata olives 🫒

  • Hard-boiled eggs 🥚

  • Mixed greens or arugula 🥬

  • Red onion slices 🧅

For the dressing:

  • Dijon mustard

  • Olive oil 🫒

  • Lemon juice 🍋

  • Garlic (minced) 🧄

  • Salt & pepper


Instructions

  • Roast or sear the salmon until just cooked and flaky. Set aside to cool slightly.

  • Boil baby potatoes until fork-tender, then halve them. Blanch green beans until crisp-tender and bright green.

  • In a large bowl or platter, arrange a bed of mixed greens. Neatly add sections of potatoes, green beans, halved cherry tomatoes, olives, sliced red onion, and quartered hard-boiled eggs.

  • Flake the salmon and place it over the salad.

  • Whisk together Dijon mustard, olive oil, lemon juice, minced garlic, salt, and pepper. Drizzle over the salad just before serving.

Notes

Try grilled salmon for extra smokiness or use canned salmon for convenience. Swap green beans for asparagus or add capers for a tangy kick. Serve with crusty bread for a full meal.
