1 store-bought or homemade pizza dough

2 cups pumpkin, peeled and cubed

2 tbsp olive oil

1 tsp ground cinnamon

1 tsp smoked paprika

Salt and black pepper, to taste

1 cup mozzarella cheese, shredded

4 oz (115 g) goat cheese, crumbled

1 small red onion, thinly sliced

1 tbsp fresh thyme leaves (or 1 tsp dried thyme)

2 tbsp balsamic glaze (for drizzling)

2 tbsp fresh arugula (optional, for garnish)
Instructions

Preheat oven to 400°F (200°C).

Toss pumpkin cubes with olive oil, cinnamon, smoked paprika, salt, and pepper. Spread evenly on a baking sheet and roast for 20–25 minutes until tender and slightly caramelized.

Increase oven temperature to 475°F (245°C).

Roll out pizza dough on a floured surface and transfer to a baking sheet or pizza stone.

Sprinkle mozzarella cheese evenly over the dough. Top with roasted pumpkin, goat cheese, and red onion slices.
