Ingredients

1 ½ pounds boneless, skinless chicken breast or thighs, cut into bite-sized cubes

2 preserved lemons (rind only), finely chopped

3 tablespoons olive oil

2 tablespoons lemon juice

3 garlic cloves, minced

1 tablespoon fresh parsley, chopped

1 tablespoon fresh cilantro, chopped

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon ground coriander

Salt and black pepper, to taste

Wooden or metal skewers (if wooden, soak in water for 30 minutes before grilling)
Instructions

In a large bowl, combine olive oil, lemon juice, garlic, preserved lemon rind, parsley, cilantro, cumin, paprika, coriander, salt, and black pepper. Mix well.

Add chicken pieces to the marinade, toss to coat evenly, and refrigerate for at least 1 hour (up to overnight for best flavor).

Preheat grill or grill pan to medium-high heat. Thread marinated chicken onto skewers.
