Description

Juicy, flavorful, and bursting with bright citrus notes, these Preserved Lemon Chicken Skewers are a unique twist on classic grilled chicken. The preserved lemons bring a deep, tangy flavor that pairs perfectly with tender chicken, fresh herbs, and warm spices. Ideal for summer cookouts, casual gatherings, or even a weeknight dinner, these skewers are as simple to make as they are impressive to serve. Pair them with rice, couscous, or a fresh salad for a complete Mediterranean-inspired meal.


Ingredients

  • 1 ½ pounds boneless, skinless chicken breast or thighs, cut into bite-sized cubes

  • 2 preserved lemons (rind only), finely chopped

  • 3 tablespoons olive oil

  • 2 tablespoons lemon juice

  • 3 garlic cloves, minced

  • 1 tablespoon fresh parsley, chopped

  • 1 tablespoon fresh cilantro, chopped

  • 1 teaspoon ground cumin

  • 1 teaspoon smoked paprika

  • ½ teaspoon ground coriander

  • Salt and black pepper, to taste

  • Wooden or metal skewers (if wooden, soak in water for 30 minutes before grilling)


Instructions

  • In a large bowl, combine olive oil, lemon juice, garlic, preserved lemon rind, parsley, cilantro, cumin, paprika, coriander, salt, and black pepper. Mix well.

  • Add chicken pieces to the marinade, toss to coat evenly, and refrigerate for at least 1 hour (up to overnight for best flavor).

  • Preheat grill or grill pan to medium-high heat. Thread marinated chicken onto skewers.

  • Grill skewers for 10–12 minutes, turning occasionally, until the chicken is golden brown and cooked through.

  • Remove from grill, garnish with extra herbs, and serve immediately with your choice of side dishes.
