  • 1 whole chicken (about 3.54 lbs)

  • 2 tablespoons olive oil

  • 1 tablespoon salt

  • 1 teaspoon black pepper

  • 1 tablespoon smoked paprika

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1/2 teaspoon dried thyme

  • 1/2 teaspoon dried rosemary

  • Zest of 1 lemon

  • 1 lemon, halved

  • 4 garlic cloves, smashed

  • Kitchen twine (for trussing)


Instructions

  • Preheat your rotisserie or oven to 375°F (190°C).

  • Remove any giblets from the chicken cavity and pat the chicken dry with paper towels.

  • In a small bowl, mix together salt, pepper, paprika, garlic powder, onion powder, thyme, rosemary, and lemon zest.

  • Rub the entire chicken with olive oil, then coat it thoroughly with the spice mixture, making sure to get under the skin when possible.

  • Stuff the chicken cavity with the halved lemon and smashed garlic cloves.

  • Truss the chicken with kitchen twine to ensure even cooking.

  • Secure the chicken on the rotisserie spit or place it on a roasting rack in the oven.

  • Roast or rotate for 1 hour to 1 hour and 15 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.

  • Let the chicken rest for 10–15 minutes before carving and serving.
