  • 1 lb ground beef

  • 1 tablespoon olive oil (if needed)

  • 1 small onion, diced

  • 3 cloves garlic, minced

  • lbs yellow or red potatoes, diced into ½-inch cubes

  • 1 teaspoon smoked paprika

  • ½ teaspoon dried thyme

  • Salt and pepper to taste

  • 1 cup shredded cheddar cheese (or your favorite blend)

  • 2 tablespoons chopped fresh parsley (optional, for garnish)

  • ¼ cup water or beef broth


Instructions

  • Heat a large skillet over medium heat. Add ground beef and cook until browned, breaking it up with a spoon. Drain excess fat and set aside.

  • In the same skillet, add a drizzle of olive oil if needed. Sauté the diced onion for 2–3 minutes until soft, then add the garlic and cook for 30 seconds.

  • Stir in the diced potatoes, smoked paprika, thyme, salt, and pepper. Add ¼ cup water or beef broth to help steam the potatoes.

  • Cover the skillet with a lid and cook for 10–12 minutes, stirring occasionally, until potatoes are tender.

  • Return the cooked ground beef to the skillet and stir to combine.

  • Sprinkle shredded cheese over the top. Cover the skillet for 1–2 minutes, just until the cheese melts.

  • Remove from heat and garnish with chopped parsley if desired. Serve ho
