1 lb ground beef

1 tablespoon olive oil (if needed)

1 small onion, diced

3 cloves garlic, minced

1½ lbs yellow or red potatoes, diced into ½-inch cubes

1 teaspoon smoked paprika

½ teaspoon dried thyme

Salt and pepper to taste

1 cup shredded cheddar cheese (or your favorite blend)

2 tablespoons chopped fresh parsley (optional, for garnish)

¼ cup water or beef broth
Instructions

Heat a large skillet over medium heat. Add ground beef and cook until browned, breaking it up with a spoon. Drain excess fat and set aside.

In the same skillet, add a drizzle of olive oil if needed. Sauté the diced onion for 2–3 minutes until soft, then add the garlic and cook for 30 seconds.

Stir in the diced potatoes, smoked paprika, thyme, salt, and pepper. Add ¼ cup water or beef broth to help steam the potatoes.

Cover the skillet with a lid and cook for 10–12 minutes, stirring occasionally, until potatoes are tender.
