Ingredients
For the Dough (or use store-bought):
-
2 ¼ teaspoons (1 packet) active dry yeast
-
1 teaspoon sugar
-
¾ cup warm water (110°F / 45°C)
-
2 cups all-purpose flour
-
1 teaspoon salt
-
1 tablespoon olive oil
For the Toppings:
-
2 tablespoons olive oil
-
2 garlic cloves, minced
-
10 oz (280g) mixed mushrooms (cremini, shiitake, oyster, or button), sliced
-
Salt and pepper, to taste
-
1 cup shredded mozzarella cheese
-
½ cup grated fontina cheese (or Gruyère)
-
¼ cup grated Parmesan cheese
-
1 teaspoon fresh thyme leaves (optional)
-
1–2 teaspoons truffle oil (white or black, to finish)
-
Fresh arugula, for garnish (optional)
Instructions
-
Make the dough: In a small bowl, mix warm water, sugar, and yeast. Let sit 5–10 minutes until foamy. In a large bowl, combine flour and salt. Add yeast mixture and olive oil, stirring until dough forms. Knead on a floured surface for 5–7 minutes until smooth. Place in a lightly oiled bowl, cover, and let rise for 1 hour.
-
Preheat the oven: Place a pizza stone in the oven if you have one, and preheat to 475°F (245°C) for 30 minutes. If using a baking sheet, lightly oil it.
-
Cook the mushrooms: In a skillet over medium heat, add olive oil and garlic. Cook for 30 seconds, then add mushrooms. Sauté for 5–7 minutes until mushrooms are golden and any liquid has evaporated. Season with salt, pepper, and thyme (if using). Set aside.
-
Shape the dough: Punch down risen dough and roll into a 12-inch circle. Place onto parchment paper (if using a stone) or a greased baking sheet.
-
Assemble the pizza: Sprinkle mozzarella, fontina, and Parmesan over the dough. Evenly distribute sautéed mushrooms on top.
-
Bake: Bake for 12–15 minutes, or until crust is golden and cheese is melted and bubbling.
-
Finish with truffle oil: Remove from oven, drizzle lightly with truffle oil, and garnish with fresh arugula if desired.
-
Serve: Slice and serve immediately while warm.
