Ingredients

1 lb ground lamb or beef

1/4 cup breadcrumbs

1 egg

1/4 cup grated onion

2 cloves garlic, minced

2 tbsp chopped parsley

1 tsp ground cumin

1/2 tsp dried oregano

1/2 tsp paprika

Salt and pepper to taste

2 tbsp olive oil (for cooking)

1 cup couscous (or quinoa/rice)

1 cup cherry tomatoes, halved

1 cucumber, sliced

1/4 cup Kalamata olives

1/4 red onion, thinly sliced

Fresh dill or mint (for garnish)
Tzatziki Sauce:

1 cup Greek yogurt

1/2 cucumber, grated and squeezed dry

1 tbsp lemon juice

1 clove garlic, minced

1 tbsp chopped dill

Pinch of salt
Instructions

Mix ground meat, breadcrumbs, egg, onion, garlic, parsley, and spices. Form into meatballs.

Pan-fry in olive oil over medium heat until browned and cooked through (about 10–12 minutes).

Prepare couscous or chosen grain according to package instructions.

Mix all tzatziki ingredients and chill for at least 15 minutes.

Slice vegetables and prepare toppings.

Assemble bowls with grain base, meatballs, vegetables, tzatziki, and garnish with herbs and lemon.
Notes
Swap meat for falafel for a vegetarian option. Store components separately for best freshness. Serve as a bowl or wrap.
