Description

Mediterranean Chicken Gyros with Creamy Feta Tzatziki made with marinated grilled chicken, fresh vegetables, and a rich yogurt-feta sauce wrapped in warm pita bread.


Ingredients

For the Chicken:
1 1/2 pounds boneless skinless chicken thighs
3 tablespoons olive oil
2 tablespoons fresh lemon juice
3 cloves garlic, minced
2 teaspoons dried oregano
1 teaspoon ground cumin
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon black pepper

For the Creamy Feta Tzatziki:
1 cup plain Greek yogurt
1/2 cup finely grated cucumber, squeezed dry
1/2 cup crumbled feta cheese
1 tablespoon olive oil
1 tablespoon fresh lemon juice
1 clove garlic, minced
1 tablespoon chopped fresh dill or mint
Salt and pepper to taste

For Serving:
4 to 6 pita breads
1 cup sliced tomatoes
1/2 cup thinly sliced red onion
1 cup shredded lettuce


Instructions

  • Whisk olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, and pepper.

  • Coat chicken with marinade and refrigerate for 1 to 4 hours.

  • Mix yogurt, cucumber, feta, olive oil, lemon juice, garlic, and herbs for tzatziki. Chill until ready to use.

  • Cook chicken over medium-high heat for 5 to 7 minutes per side until internal temperature reaches 165°F.

  • Rest chicken 5 minutes, then slice into strips.

  • Warm pita bread.

  • Spread tzatziki on pita, add chicken and vegetables, fold, and serve.

Notes

Squeeze cucumber thoroughly to prevent watery sauce. Chicken can be prepared ahead and reheated gently before assembling.
