Ingredients
For the Meatloaf:

1 egg

1 small onion, finely chopped

2 cloves garlic, minced

2 tablespoons ketchup

1 tablespoon Worcestershire sauce

For the Mushroom Gravy:

2 tablespoons butter

8 oz mushrooms, sliced (white or cremini)

1 tablespoon flour

1½ cups beef broth

1 tablespoon Worcestershire sauce

½ teaspoon garlic powder

Salt and pepper to taste

Optional: 1 tablespoon heavy cream for richness

Preheat oven to 375°F (190°C). Line a loaf pan with parchment or lightly grease it.

In a large bowl, combine breadcrumbs and milk. Let sit for 5 minutes to soak.

Add ground beef, egg, onion, garlic, ketchup, Worcestershire, thyme, salt, and pepper. Mix just until combined—do not overwork.

Press the mixture into the prepared loaf pan and smooth the top.

Bake for 50–60 minutes or until internal temperature reaches 160°F. Let rest for 10 minutes before slicing.

While meatloaf bakes, prepare the gravy: In a skillet, melt butter over medium heat. Add mushrooms and cook until browned and softened, about 6–8 minutes.
