  • lbs ground beef (80/20 recommended)

  • 1 cup breadcrumbs

  • ½ cup milk

  • 1 egg

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 2 tablespoons ketchup

  • 1 tablespoon Worcestershire sauce

  • 1 teaspoon dried thyme

  • 1 teaspoon salt

  • ½ teaspoon black pepper

For the Mushroom Gravy:

  • 2 tablespoons butter

  • 8 oz mushrooms, sliced (white or cremini)

  • 1 tablespoon flour

  • 1½ cups beef broth

  • 1 tablespoon Worcestershire sauce

  • ½ teaspoon garlic powder

  • Salt and pepper to taste

  • Optional: 1 tablespoon heavy cream for richness


Instructions

  • Preheat oven to 375°F (190°C). Line a loaf pan with parchment or lightly grease it.

  • In a large bowl, combine breadcrumbs and milk. Let sit for 5 minutes to soak.

  • Add ground beef, egg, onion, garlic, ketchup, Worcestershire, thyme, salt, and pepper. Mix just until combined—do not overwork.

  • Press the mixture into the prepared loaf pan and smooth the top.

  • Bake for 50–60 minutes or until internal temperature reaches 160°F. Let rest for 10 minutes before slicing.

  • While meatloaf bakes, prepare the gravy: In a skillet, melt butter over medium heat. Add mushrooms and cook until browned and softened, about 6–8 minutes.

  • Sprinkle in flour and stir for 1 minute to create a roux.

  • Slowly whisk in beef broth. Add Worcestershire sauce and garlic powder. Simmer for 5–7 minutes, until thickened.

  • Season with salt and pepper to taste. Stir in cream, if using, for added richness.

  • Slice the meatloaf and spoon mushroom gravy over each serving.
