Made with ground beef, breadcrumbs, and a tangy ketchup glaze, they bake faster than traditional meatloaf and are loved by both kids and adults alike.

1 lb ground beef (or ground turkey)

1/2 cup breadcrumbs

1/4 cup milk

1 large egg

1/2 small onion, finely chopped

2 cloves garlic, minced

1/4 cup grated Parmesan cheese (optional)

1 tbsp Worcestershire sauce

1 tsp salt

1/2 tsp black pepper

1/2 tsp dried thyme or Italian seasoning

1/3 cup ketchup (plus more for topping)

Cooking spray or oil for greasing muffin tin
Instructions

Preheat oven to 375°F (190°C). Lightly grease a 12-cup muffin tin with cooking spray or oil.

In a large bowl, combine ground beef, breadcrumbs, milk, egg, chopped onion, garlic, Parmesan, Worcestershire sauce, salt, pepper, thyme, and 1/3 cup ketchup.

Mix until just combined—do not overmix to keep the meatloaf tender.

Divide the mixture evenly among the muffin cups, pressing gently to fill.

Top each mini meatloaf with a spoonful of ketchup.

Bake for 20–25 minutes, or until the internal temperature reaches 160°F (71°C).

Let rest for 5 minutes before removing from the muffin tin. Serve warm.
