  • 1 lb ground beef (or ground turkey)

  • 1/2 cup breadcrumbs

  • 1/4 cup milk

  • 1 large egg

  • 1/2 small onion, finely chopped

  • 2 cloves garlic, minced

  • 1/4 cup grated Parmesan cheese (optional)

  • 1 tbsp Worcestershire sauce

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1/2 tsp dried thyme or Italian seasoning

  • 1/3 cup ketchup (plus more for topping)

  • Cooking spray or oil for greasing muffin tin


Instructions

  • Preheat oven to 375°F (190°C). Lightly grease a 12-cup muffin tin with cooking spray or oil.

  • In a large bowl, combine ground beef, breadcrumbs, milk, egg, chopped onion, garlic, Parmesan, Worcestershire sauce, salt, pepper, thyme, and 1/3 cup ketchup.

  • Mix until just combined—do not overmix to keep the meatloaf tender.

  • Divide the mixture evenly among the muffin cups, pressing gently to fill.

  • Top each mini meatloaf with a spoonful of ketchup.

  • Bake for 20–25 minutes, or until the internal temperature reaches 160°F (71°C).

  • Let rest for 5 minutes before removing from the muffin tin. Serve warm.
