Ingredients
For the Chicken Meatballs:

1 lb ground chicken

1/4 cup breadcrumbs

1/4 cup grated Parmesan cheese

1 egg

2 cloves garlic, minced

1/2 tsp onion powder

1/2 tsp Italian seasoning

1/2 tsp salt

1/4 tsp black pepper

1 tbsp olive oil (for cooking)
For the Creamy “Marry Me” Sauce:

1 tbsp olive oil
-
3 cloves garlic, minced
-
1/2 cup chopped sun-dried tomatoes (packed in oil, drained)

1 tsp red pepper flakes (adjust to taste)

3/4 cup chicken broth
-
1/2 cup heavy cream
-
1/3 cup grated Parmesan cheese

1 tsp Italian seasoning

Salt & pepper to taste

Fresh basil or parsley, for garnish (optional)
Instructions

Make the meatballs:
In a large bowl, mix ground chicken, breadcrumbs, Parmesan, egg, garlic, and seasonings until just combined. Roll into 12–14 small meatballs. -
Cook the meatballs:
Heat olive oil in a large skillet over medium heat. Add meatballs and cook, turning occasionally, for 6–8 minutes until browned and cooked through (internal temp 165°F). Remove from skillet and set aside. -
Make the sauce:
In the same skillet, add a bit more oil if needed. Sauté garlic for 30 seconds. Add sun-dried tomatoes and red pepper flakes, cooking for 1–2 minutes. -
Add liquids & simmer:
Pour in chicken broth and bring to a simmer. Stir in heavy cream, Parmesan, Italian seasoning, salt, and pepper. Let the sauce simmer gently for 3–5 minutes until slightly thickened. -
Combine & serve:
Return meatballs to the skillet and spoon sauce over them. Simmer for 3–4 more minutes. Garnish with basil or parsley and serve hot over pasta, rice, or mashed potatoes.
Notes
Swap chicken for turkey if preferred. Add spinach or mushrooms to the sauce for extra veggies. This dish pairs well with fettuccine, garlic bread, or roasted asparagus. Leftovers reheat beautifully and make great meal prep!
