Description

Loaded Baked Potato with Steak Bites is a satisfying, steakhouse-inspired meal that delivers bold flavor and comfort in every bite. Fluffy baked potatoes are loaded with buttery, garlicky steak bites, gooey cheese, crisp bacon, and a dollop of sour cream — perfect for weeknight dinners or entertaining guests.

  • 1 lb sirloin steak, cut into bite-sized cubes

  • 1 tbsp olive oil

  • 1 tbsp butter

  • 3 cloves garlic, minced

  • Salt & pepper to taste

  • Optional: 1 tsp steak seasoning or paprika

For the Baked Potatoes:

  • 4 large russet potatoes, scrubbed clean

  • 2 tbsp olive oil

  • Salt (for skin)

Toppings:

  • 1 cup shredded cheddar cheese

  • 4 slices cooked bacon, crumbled

  • 1/2 cup sour cream

  • 2 green onions, sliced

  • 2 tbsp butter (for inside potatoes)

  • Optional: chives or parsley for garnish


Instructions

  1. Bake the Potatoes:
    Preheat oven to 425°F (220°C). Rub potatoes with olive oil and sprinkle with salt. Place directly on the oven rack and bake for 45–50 minutes until fork-tender and crispy outside.

  2. Cook the Steak Bites:
    Heat olive oil in a large skillet over medium-high heat. Add steak bites in a single layer (in batches if needed), season with salt, pepper, and steak seasoning. Sear for 1–2 minutes per side until browned. Lower heat, add butter and garlic, and spoon over steak. Cook 1 more minute and remove from heat.

  3. Assemble the Loaded Potatoes:
    Cut open each baked potato and fluff the insides with a fork. Add a pat of butter, then top with shredded cheddar, steak bites, bacon, sour cream, and green onions.

Notes

You can swap steak for grilled chicken or mushrooms for a twist. Add sautéed onions or jalapeños for an extra kick. Serve with a side salad or roasted broccoli for balance. Perfect for game day, casual dinners, or a fun meal prep idea!
