Description

Bright, comforting, and bursting with flavor—this lemon chicken soup is a vibrant twist on a classic. With tender chicken, fresh lemon, and soothing broth, it’s a go-to for any season.


Ingredients

  • Cooked chicken (shredded or chopped) 🍗

  • Carrots (sliced) 🥕

  • Celery (chopped) 🌿

  • Onion (diced) 🧅

  • Garlic (minced) 🧄

  • Chicken broth

  • Lemon juice and zest 🍋

  • Olive oil 🫒

  • Rice, orzo, or pasta of choice 🍚🍝

  • Fresh dill or parsley 🌱

  • Thyme or Italian seasoning 🌿

  • Salt & pepper

Optional additions:

  • Spinach or kale 🌱

  • Egg (for Greek avgolemono-style) 🥚


Instructions

  • Heat olive oil in a large pot, then sauté onion, garlic, carrots, and celery until soft.

  • Pour in chicken broth and bring to a boil. Add rice or pasta and simmer until tender.

  • Stir in chicken, lemon juice and zest, herbs, salt, and pepper. Simmer gently until flavors blend.

  • Add greens if using and cook until just wilted.

  • Serve hot with extra lemon on the side and a sprinkle of fresh herbs.

Notes

Add a whisked egg for a creamy Greek-style finish or a splash of cream for richness. Ideal for using leftover roast chicken. Great with crusty bread or pita!
