1/2 tsp onion powder
-
1/4 tsp black pepper
-
1/2 tsp salt
-
1 tbsp soy sauce
-
1 tsp sesame oil (optional)
For the Rice Bake:
-
1 cup uncooked jasmine or long-grain white rice
-
2 cups chicken broth
-
1 cup frozen peas and carrots
-
1/2 tsp salt
-
1/4 tsp garlic powder
For the Honey Garlic Glaze:
-
1/4 cup honey
-
3 tbsp soy sauce
-
2 cloves garlic, minced
-
1 tbsp rice vinegar or apple cider vinegar
-
1 tsp cornstarch + 2 tsp water (for slurry)
Instructions
-
Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
-
Make the meatballs: In a large bowl, mix ground meat, breadcrumbs, egg, garlic, soy sauce, salt, pepper, onion powder, and sesame oil until combined. Form into 16–18 small meatballs.
-
Assemble the rice bake: In the prepared baking dish, mix uncooked rice, broth, frozen vegetables, salt, and garlic powder. Nestle the meatballs gently into the rice mixture.
-
Bake uncovered for 35–40 minutes, or until the rice is tender and the meatballs are cooked through (internal temp 165°F). Let sit for 5 minutes.
-
Make the glaze: While baking, whisk together honey, soy sauce, garlic, and vinegar in a small saucepan over medium heat. Bring to a simmer, stir in the cornstarch slurry, and cook until thickened (2–3 minutes).
-
Drizzle glaze over the baked meatballs and rice. Garnish with green onions or sesame seeds if desired.
