For the Meatballs:

  • 1 lb ground beef or ground chicken

  • 1/4 cup breadcrumbs

  • 1 egg

  • 2 cloves garlic, minced

  • 1/2 tsp onion powder

  • 1/4 tsp black pepper

  • 1/2 tsp salt

  • 1 tbsp soy sauce

  • 1 tsp sesame oil (optional)

For the Rice Bake:

  • 1 cup uncooked jasmine or long-grain white rice

  • 2 cups chicken broth

  • 1 cup frozen peas and carrots

  • 1/2 tsp salt

  • 1/4 tsp garlic powder

For the Honey Garlic Glaze:

  • 1/4 cup honey

  • 3 tbsp soy sauce

  • 2 cloves garlic, minced

  • 1 tbsp rice vinegar or apple cider vinegar

  • 1 tsp cornstarch + 2 tsp water (for slurry)


Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.

  2. Make the meatballs: In a large bowl, mix ground meat, breadcrumbs, egg, garlic, soy sauce, salt, pepper, onion powder, and sesame oil until combined. Form into 16–18 small meatballs.

  3. Assemble the rice bake: In the prepared baking dish, mix uncooked rice, broth, frozen vegetables, salt, and garlic powder. Nestle the meatballs gently into the rice mixture.

  4. Bake uncovered for 35–40 minutes, or until the rice is tender and the meatballs are cooked through (internal temp 165°F). Let sit for 5 minutes.

  5. Make the glaze: While baking, whisk together honey, soy sauce, garlic, and vinegar in a small saucepan over medium heat. Bring to a simmer, stir in the cornstarch slurry, and cook until thickened (2–3 minutes).

  6. Drizzle glaze over the baked meatballs and rice. Garnish with green onions or sesame seeds if desired.

Notes

You can prep the meatballs ahead of time or use frozen (thawed) meatballs to save time. This dish also works well with brown rice (increase broth and bake time slightly). Serve with a side salad or steamed greens for a balanced meal.
