Ingredients
Chicken Meatballs:

Bowl Base:

Cooked rice, quinoa, or couscous

Roasted vegetables (zucchini, carrots, bell peppers)

Yogurt Herb Sauce:

Greek yogurt

Lemon juice
-
Garlic, minced

Fresh herbs (parsley, dill, or mint)

Instructions

In a bowl, mix ground chicken, garlic, herbs, green onions, egg, breadcrumbs, salt, and pepper. Form into small meatballs.

Heat olive oil in a skillet and cook meatballs until golden and cooked through, about 10–12 minutes. Set aside.

Blend or whisk together yogurt, lemon juice, garlic, herbs, olive oil, salt, and pepper to make the sauce.

In serving bowls, layer your base grain, roasted veggies, cucumber, and cherry tomatoes.

Top with chicken meatballs and drizzle with the yogurt herb sauce.

Garnish with extra herbs and serve warm.
Notes
You can bake the meatballs instead of pan-frying. Add avocado or pickled onions for extra flavor and texture.
