Ingredients

1½–2 lbs carrots, peeled and cut into chunks

Instructions

Boil carrots in salted water for 10–15 minutes until fork-tender. Drain and let cool slightly.

Preheat oven to 425°F and line a baking sheet.

Place carrots on the sheet and gently smash with a glass or measuring cup.

Drizzle with olive oil and sprinkle with seasonings. Toss or brush to coat.

Roast for 20–25 minutes, flipping halfway, until golden and crisp on the edges.
