For the Gyros:
- 4 pita breads
- 1 cup cherry tomatoes (halved)
- 1 small red onion (thinly sliced)
- 1 cup shredded lettuce
- 1/2 cup feta cheese (crumbled)
Instructions
- Marinate the Chicken: In a large bowl, mix olive oil, lemon juice, minced garlic, oregano, smoked paprika, cumin, salt, and pepper. Add chicken strips and toss to coat. Cover and refrigerate for at least 30 minutes.
- Prepare the Tzatziki Sauce: In a bowl, combine Greek yogurt, grated cucumber, minced garlic, olive oil, lemon juice, dill or mint, salt, and pepper. Mix well and refrigerate until serving.
- Cook the Chicken: Preheat a grill or grill pan over medium-high heat. Grill chicken strips for 4-5 minutes per side until fully cooked and slightly charred. Let rest for a few minutes.
- Assemble the Gyros: Warm pita breads on the grill or in a skillet. Layer with lettuce, grilled chicken, cherry tomatoes, red onion, and tzatziki sauce. Sprinkle with feta cheese.
- Serve: Fold the pita in half and serve immediately. Enjoy!
Notes
- For a vegetarian option, replace the chicken with grilled halloumi or falafel.
- Add a spicy twist by incorporating red pepper flakes or hot sauce.
- Turn this into a gyro bowl by serving ingredients over rice or quinoa instead of pita bread.
