Ingredients

For the salad:

  • Grilled chicken breast or thighs (sliced) 🍗

  • Romaine or mixed greens 🥬

  • Cherry tomatoes (halved) 🍅

  • Cucumber (sliced or chopped) 🥒

  • Red onion (thinly sliced) 🧅

  • Kalamata olives 🫒

  • Feta cheese (crumbled or cubed) 🧀

  • Fresh parsley or oregano 🌿

For the dressing:

  • Olive oil 🫒

  • Red wine vinegar

  • Lemon juice 🍋

  • Garlic (minced) 🧄

  • Dried oregano

  • Salt & pepper

For the tzatziki:

  • Greek yogurt 🥛

  • Grated cucumber 🥒

  • Garlic (minced) 🧄

  • Lemon juice 🍋

  • Dill or mint 🌿

  • Salt & pepper


Instructions

  • Grill seasoned chicken until charred and cooked through. Let rest, then slice.

  • In a bowl or on a platter, layer greens with tomatoes, cucumber, onion, olives, and feta.

  • Whisk together dressing ingredients and drizzle over the salad.

  • Top with sliced grilled chicken and dollops of tzatziki.

  • Serve fresh with warm pita or as a standalone dish!

Notes

Add quinoa or couscous for a hearty twist. Make it vegetarian by skipping the chicken and adding chickpeas or grilled eggplant. Tastes even better with a side of lemony hummus!
