  • 2 boneless, skinless chicken breasts

  • 2 tablespoons olive oil

  • 1 teaspoon dried oregano

  • 1 teaspoon garlic powder

  • 1 teaspoon paprika

  • Salt and pepper, to taste

  • 6 cups romaine lettuce, chopped

  • 1 cucumber, sliced

  • 1 pint cherry tomatoes, halved

  • 1/2 red onion, thinly sliced

  • 1/2 cup Kalamata olives, pitted

  • 1/2 cup feta cheese, crumbled

For the tzatziki:

  • 1 cup plain Greek yogurt

  • 1/2 cucumber, grated and excess water squeezed out

  • 2 garlic cloves, minced

  • 2 tablespoons olive oil

  • 1 tablespoon lemon juice

  • 1 tablespoon fresh dill, chopped

  • Salt, to taste


Instructions

  • Preheat grill or grill pan over medium-high heat.

  • Rub chicken breasts with olive oil, oregano, garlic powder, paprika, salt, and pepper.

  • Grill chicken for 6–7 minutes per side, or until fully cooked (internal temperature 165°F). Remove and let rest before slicing.

  • In a large bowl, combine romaine, cucumber, cherry tomatoes, red onion, olives, and feta.

  • To make the tzatziki, mix Greek yogurt, grated cucumber, garlic, olive oil, lemon juice, dill, and salt in a bowl until smooth and creamy.

  • Slice grilled chicken and place on top of the salad.

  • Drizzle with tzatziki or serve it on the side as a dip.
