  • Grilled chicken skewers (homemade or store-bought)

  • Flatbread or pita bread

  • 1 cucumber, thinly sliced

  • 1 cup cherry tomatoes, halved

  • 1 cup red cabbage, finely shredded

  • 1/4 cup fresh parsley, chopped

  • 1 cup thick yogurt or Greek yogurt

  • Salt and black pepper, to taste

  • 2 tablespoons extra virgin olive oil

  • 1 tablespoon fresh lemon juice


Instructions

  • Grill the chicken skewers over medium-high heat until cooked through and slightly charred, about 10–12 minutes. Turn occasionally for even cooking.

  • Warm the flatbreads in a dry skillet, oven, or grill until soft and pliable.

  • Prepare the vegetables: slice the cucumber, halve the cherry tomatoes, and shred the red cabbage.

  • In a small bowl, mix the yogurt with a pinch of salt, a drizzle of olive oil, and a splash of lemon juice. For extra flavor, you can add a bit of minced garlic or a sprinkle of dried mint.

  • To assemble, lay a warm flatbread on a plate. Spread a spoonful of yogurt sauce over it. Add a handful of red cabbage, cucumber slices, and cherry tomatoes.

  • Place a grilled chicken skewer on top and gently slide the chicken off the stick onto the wrap.

  • Drizzle with olive oil and lemon juice, season with salt and pepper, and top with chopped parsley.

  • Fold or roll the flatbread and serve immediately.
