Description

Tender steak bites and crispy golden potatoes tossed in a rich garlic butter sauce — a one-pan dinner that’s hearty, flavorful, and ready in under 35 minutes.

Ingredients

  • 1½ lbs sirloin or ribeye steak, cut into 1-inch cubes

  • 1½ lbs baby potatoes, halved or quartered

  • 3 tbsp olive oil, divided

  • 3 tbsp unsalted butter

  • 4 garlic cloves, minced

  • 1 tsp smoked paprika

  • Salt and black pepper, to taste

  • Optional: 1 tsp Italian seasoning or fresh thyme

  • Fresh parsley, chopped (for garnish)

Instructions

  • Heat 2 tbsp olive oil in a large skillet over medium heat.

  • Add potatoes, season with salt, pepper, and paprika. Cook 10–12 minutes, turning occasionally, until browned and tender. Remove and set aside.

  • Toss steak cubes with salt and pepper. Add 1 tbsp oil to the pan, then sear steak in batches for 2–3 minutes per side. Remove and set aside.

  • Reduce heat. Melt butter in the same pan, add garlic, and sauté 30–60 seconds.

  • Return steak and potatoes to skillet. Toss in garlic butter for 1–2 minutes until coated and hot.

  • Garnish with parsley and serve immediately.

Notes

  • Pat steak dry for better sear.

  • Use cast iron for best browning.

  • Add mushrooms, spinach, or green beans for variety.
