For the Steak Tips:

  • lbs sirloin or ribeye steak, cut into bite-sized cubes

  • Salt and black pepper to taste

  • 2 tablespoons olive oil

  • 3 tablespoons unsalted butter

  • 4 cloves garlic, minced

  • 1 tablespoon fresh parsley, chopped (for garnish)

For the Cheesy Rigatoni:

  • 12 oz rigatoni pasta

  • 2 tablespoons butter

  • 2 tablespoons all-purpose flour

  • 2 cups whole milk

  • 1 cup shredded mozzarella cheese

  • ½ cup grated Parmesan cheese

  • Salt and pepper to taste

  • ¼ teaspoon garlic powder (optional)

  • Fresh parsley or basil for garnish (optional)


Instructions

  • Cook rigatoni according to package instructions until al dente. Drain and set aside.

  • While the pasta cooks, pat steak tips dry and season generously with salt and pepper.

  • Heat olive oil in a large skillet over high heat. Sear steak tips in batches (don’t overcrowd the pan) for 2–3 minutes per side, or until browned and cooked to your preferred doneness. Remove and set aside.

  • Reduce heat to medium, add butter to the same skillet, and stir in the minced garlic. Cook for 1 minute until fragrant, then return steak tips to the pan. Toss to coat in the garlic butter.

  • For the cheesy rigatoni, melt butter in a saucepan over medium heat. Whisk in flour and cook for 1 minute to make a roux.

  • Gradually add milk while whisking constantly. Simmer for 3–4 minutes until slightly thickened.

  • Stir in mozzarella and Parmesan cheeses until melted and smooth. Season with salt, pepper, and garlic powder if using.

  • Add cooked rigatoni to the sauce and toss to coat evenly.

  • Plate cheesy rigatoni and top with garlic butter steak tips. Garnish with fresh parsley or basil and serve immediately.
