Description

This rich and velvety stroganoff is the ultimate cozy meal—tender chicken and sautéed mushrooms enveloped in a luscious, creamy sauce. Served over egg noodles or rice, it’s pure comfort in a bowl!


Ingredients

For the stroganoff:

  • Boneless chicken (sliced or cubed) 🍗

  • Mushrooms (sliced, any variety) 🍄

  • Onion (diced) 🧅

  • Garlic (minced) 🧄

  • Olive oil & butter 🫒🧈

  • Chicken broth

  • Sour cream or Greek yogurt 🥛

  • Dijon mustard

  • Worcestershire sauce

  • Paprika

  • Salt & pepper

For serving:

  • Cooked egg noodles, rice, or mashed potatoes 🍝

  • Fresh parsley 🌿


Instructions

  • Sear chicken in olive oil until golden and just cooked through. Remove and set aside.

  • In the same pan, sauté onions, garlic, and mushrooms in butter until softened and browned.

  • Stir in broth, mustard, Worcestershire sauce, and paprika. Simmer to reduce slightly.

  • Lower heat and stir in sour cream until smooth. Return chicken to the sauce and heat through.

  • Serve over noodles or rice and top with parsley for a fresh finish.

Notes

Add spinach or peas for extra veggies. Use cream for a richer version, or swap chicken for beef strips. Leftovers are even better the next day!
