Description

Tender meatballs swimming in a rich, peppery cream sauce—this one-pan wonder is hearty, colorful, and packed with flavor! Serve it over rice, pasta, or mashed potatoes for a comforting meal with a twist.

 


Ingredients

For the meatballs:

  • Ground beef or turkey

  • Breadcrumbs

  • Egg 🥚

  • Garlic (minced) 🧄

  • Onion (grated or finely chopped) 🧅

  • Italian seasoning 🌿

  • Salt & pepper

For the sauce:

  • Bell peppers (red, yellow, green – sliced) 🌶️

  • Onion (sliced) 🧅

  • Garlic (minced) 🧄

  • Olive oil 🫒

  • Chicken or beef broth

  • Heavy cream or half-and-half 🥛

  • Paprika

  • Grated parmesan (optional) 🧀

  • Salt & pepper

For serving:

  • Fresh parsley 🌱

  • Rice, pasta, or mashed potatoes 🍚🍝🥔


Instructions

  • Mix meatball ingredients and form into small balls. Sear in a skillet until browned on all sides, then remove.

  • In the same skillet, sauté bell peppers, onion, and garlic until tender.

  • Add broth, cream, and paprika. Stir and simmer until slightly thickened.

  • Return meatballs to the pan and simmer in the sauce until cooked through and flavors meld.

  • Garnish with parsley and serve over your favorite base.

Notes

Add a touch of Dijon mustard or crushed red pepper for depth. Use plant-based meatballs for a vegetarian twist. Great for meal prep and tastes even better the next day!
