Description

A flavorful one-pot meal with smoky sausage, tender rice, and bold seasonings — perfect for busy weeknights or easy meal prep.


Ingredients

  • 14 oz smoked sausage, sliced

  • 1½ cups long grain white rice

  • 1 onion, chopped

  • 1 bell pepper, chopped

  • 3 cloves garlic, minced

  • 3 cups chicken broth

  • 1 can (14.5 oz) diced tomatoes

  • 1 tsp paprika

  • ½ tsp dried thyme

  • ½ tsp oregano

  • Salt and pepper to taste

  • 1 tbsp olive oil

  • Optional: chopped parsley, peas, spinach, or Cajun seasoning


Instructions

  1. Sear sausage in olive oil until browned. Remove and set aside.

  2. Sauté onion and pepper until soft. Add garlic; cook 30 seconds.

  3. Stir in rice and seasonings. Toast 1–2 minutes.

  4. Add broth and tomatoes. Stir and bring to boil.

  5. Return sausage to pan. Cover and simmer 18–22 minutes until rice is tender.

  6. Fluff rice, stir in extras, and serve.

Notes

  • For brown rice, increase broth and simmer 40–45 minutes.

  • Use turkey sausage for a lighter version.

  • Add hot sauce for extra kick
