Description
A flavorful one-pot meal with smoky sausage, tender rice, and bold seasonings — perfect for busy weeknights or easy meal prep.
Ingredients
- 
14 oz smoked sausage, sliced 
- 
1½ cups long grain white rice 
- 
1 onion, chopped 
- 
1 bell pepper, chopped 
- 
3 cloves garlic, minced 
- 
3 cups chicken broth 
- 
1 can (14.5 oz) diced tomatoes 
- 
1 tsp paprika 
- 
½ tsp dried thyme 
- 
½ tsp oregano 
- 
Salt and pepper to taste 
- 
1 tbsp olive oil 
- 
Optional: chopped parsley, peas, spinach, or Cajun seasoning 
Instructions
- 
Sear sausage in olive oil until browned. Remove and set aside. 
- 
Sauté onion and pepper until soft. Add garlic; cook 30 seconds. 
- 
Stir in rice and seasonings. Toast 1–2 minutes. 
- 
Add broth and tomatoes. Stir and bring to boil. 
- 
Return sausage to pan. Cover and simmer 18–22 minutes until rice is tender. 
- 
Fluff rice, stir in extras, and serve. 
Notes
- 
For brown rice, increase broth and simmer 40–45 minutes. 
- 
Use turkey sausage for a lighter version. 
- 
Add hot sauce for extra kick
