Instructions
-
Roast the Potatoes:
Preheat oven to 425°F (220°C). Toss quartered potatoes with olive oil, garlic powder, paprika, salt, and pepper. Spread on a parchment-lined baking sheet. Roast for 30–35 minutes, flipping halfway, until golden and crisp. -
Cook the Beef:
While potatoes roast, heat 1 tbsp olive oil in a skillet over medium heat. Sauté onion for 3–4 minutes until soft. Add garlic and cook for 30 seconds more. -
Add ground beef, season with cumin, paprika, chili flakes, salt, and pepper. Cook until browned, about 6–8 minutes. Drain excess fat if needed.
-
Stir in tomato paste, tomato sauce, broth, and Worcestershire sauce. Simmer for 5–7 minutes, stirring occasionally, until thickened and saucy.
-
Assemble the Dish:
Spread roasted potatoes on a platter or serve in bowls. Spoon hot saucy beef over the top. Garnish with chopped parsley or cilantro.
Notes
Top with sour cream, shredded cheese, or a fried egg for a brunch twist. You can swap beef for ground turkey or plant-based meat. Serve with crusty bread or salad for a full meal.
