For the Crispy Potatoes:

  • 1.5 lbs baby potatoes or Yukon golds, quartered

  • 2 tbsp olive oil

  • 1/2 tsp garlic powder

  • 1/2 tsp paprika

  • Salt & pepper to taste

For the Saucy Beef:

  • 1 tbsp olive oil

  • 1 small onion, finely diced

  • 3 cloves garlic, minced

  • 1 lb ground beef

  • 1/2 tsp cumin

  • 1/2 tsp smoked paprika

  • 1/4 tsp chili flakes (optional)

  • Salt & pepper to taste

  • 1 tbsp tomato paste

  • 1/2 cup tomato sauce or crushed tomatoes

  • 1/4 cup beef broth or water

  • 1 tbsp Worcestershire sauce (optional)

  • Fresh parsley or cilantro for garnish


Instructions

  1. Roast the Potatoes:
    Preheat oven to 425°F (220°C). Toss quartered potatoes with olive oil, garlic powder, paprika, salt, and pepper. Spread on a parchment-lined baking sheet. Roast for 30–35 minutes, flipping halfway, until golden and crisp.

  2. Cook the Beef:
    While potatoes roast, heat 1 tbsp olive oil in a skillet over medium heat. Sauté onion for 3–4 minutes until soft. Add garlic and cook for 30 seconds more.

  3. Add ground beef, season with cumin, paprika, chili flakes, salt, and pepper. Cook until browned, about 6–8 minutes. Drain excess fat if needed.

  4. Stir in tomato paste, tomato sauce, broth, and Worcestershire sauce. Simmer for 5–7 minutes, stirring occasionally, until thickened and saucy.

  5. Assemble the Dish:
    Spread roasted potatoes on a platter or serve in bowls. Spoon hot saucy beef over the top. Garnish with chopped parsley or cilantro.

Notes

Top with sour cream, shredded cheese, or a fried egg for a brunch twist. You can swap beef for ground turkey or plant-based meat. Serve with crusty bread or salad for a full meal.
