Creamy Tuscan Chicken: A Luxurious One-Pan Dinner Full of Mediterranean Flavor

Description

  • Season chicken with salt, pepper, and Italian herbs, then sear in olive oil until golden and cooked through. Set aside.

  • In the same pan, sauté onion and garlic until fragrant, then add sun-dried tomatoes.

  • Pour in broth and cream, stirring to deglaze. Simmer until slightly thickened.

  • Stir in parmesan and spinach, cooking until wilted. Return chicken to the pan and simmer a few more minutes.

  • Serve hot over pasta, rice, or mashed potatoes, and garnish as desired.


Ingredients

For the chicken:

  • Boneless, skinless chicken breasts or thighs 🍗

  • Olive oil 🫒

  • Garlic (minced) 🧄

  • Onion (diced) 🧅

  • Sun-dried tomatoes (chopped) 🍅

  • Spinach or baby spinach 🌱

  • Heavy cream or half-and-half 🥛

  • Chicken broth

  • Grated parmesan cheese 🧀

  • Italian seasoning 🌿

  • Salt & pepper

Optional garnish:

  • Fresh basil or parsley 🌿

  • Crushed red pepper flakes 🌶️

Notes

Swap cream for coconut milk for a dairy-free version. Add mushrooms for more umami or white wine for extra richness. This sauce is great with crusty bread too!
