Ingredients
-
2 large boneless, skinless chicken breasts (halved horizontally to make 4 cutlets)
-
Salt and black pepper, to taste
-
1/4 cup all-purpose flour (for dredging)
-
2 tablespoons olive oil
-
2 tablespoons butter
-
3 cloves garlic, minced
-
1 cup chicken broth
-
3/4 cup heavy cream
-
3/4 cup grated Parmesan cheese
-
1 teaspoon Italian seasoning or dried thyme
-
Chopped fresh parsley, for garnish
Instructions
-
Season the chicken cutlets with salt and pepper, then dredge lightly in flour, shaking off any excess.
-
In a large skillet, heat olive oil over medium-high heat. Sear chicken for 4–5 minutes per side, until golden brown and cooked through. Remove from skillet and set aside.
-
In the same skillet, reduce heat to medium. Add butter and garlic, and cook for 1–2 minutes until fragrant.
-
Pour in chicken broth and deglaze the pan by scraping up any browned bits. Simmer for 2–3 minutes.
-
Stir in heavy cream, Parmesan cheese, and Italian seasoning. Simmer gently for 3–4 minutes, stirring until the sauce thickens.
-
Return the chicken to the pan and spoon the sauce over it. Simmer for an additional 2–3 minutes to heat through.
-
Garnish with chopped parsley and serve hot.
