Ingredients
Scale
For the Chicken:
- 500g chicken breast, diced
- 1 tablespoon olive oil
- 1 teaspoon paprika powder
- 1/2 teaspoon dried thyme
- 200ml heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish
For the Herb Potatoes:
- 600g baby potatoes, cubed
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt, pepper, and chopped parsley to taste
For the Fluffy Rice:
- 200g long-grain rice
- Salt and black pepper
Instructions
- Rinse the long-grain rice under cold water until clear. Bring a pot of salted water to boil, add rice, reduce heat, cover, and simmer for about 15 minutes. Let it sit covered for 5 minutes. Fluff with a fork and season with salt and pepper. Keep warm.
- Preheat oven to 200°C (392°F). Toss cubed baby potatoes with olive oil, garlic powder, salt, and pepper. Spread them on a parchment-lined baking sheet and roast for 25-30 minutes, flipping halfway through. Sprinkle with chopped parsley after roasting.
- Heat olive oil in a large skillet over medium-high heat. Add diced chicken breast, paprika, thyme, salt, and pepper. Sauté until golden and cooked through, about 6-8 minutes.
- Lower heat to medium-low. Pour in the heavy cream, stir well, and simmer for 5-7 minutes until the sauce thickens. Garnish with fresh parsley.
- Serve by plating the rice, herb potatoes, and creamy paprika chicken. Drizzle extra sauce over the chicken and rice. Enjoy!
Notes
- Marinate the chicken in paprika and thyme for deeper flavor.
- Substitute chicken thighs for a juicier option.
- Smoked paprika can add a smoky depth.
- Fresh vegetables like spinach or bell peppers can be added to the chicken.
- Store leftovers separately for best texture. Reheat gently with a splash of cream or broth.
- This dish pairs beautifully with green salads, steamed vegetables, or a crisp white wine.
