There’s nothing more comforting than a bowl of creamy mushroom pasta. This dish brings together earthy mushrooms, aromatic garlic, and a velvety cream sauce that coats every strand of pasta to perfection. It’s a quick yet elegant recipe, making it just as perfect for a cozy weeknight dinner as it is for a special date night at home. Simple ingredients come together to create a restaurant-quality dish that’s ready in under 30 minutes.


Ingredients

  • 12 oz pasta (fettuccine, linguine, or penne)

  • 2 tablespoons olive oil

  • 2 tablespoons butter

  • 1 medium onion, finely chopped

  • 3 garlic cloves, minced

  • 12 oz mushrooms (cremini, button, or mixed), sliced

  • 1 teaspoon thyme (fresh or dried)

  • 1 cup heavy cream

  • ½ cup vegetable or chicken broth

  • ½ cup grated Parmesan cheese

  • Salt and black pepper, to taste

  • Fresh parsley, chopped, for garnish


Instructions

  • Cook pasta according to package directions until al dente. Reserve ½ cup of pasta water, then drain and set aside.

  • In a large skillet, heat olive oil and butter over medium heat. Add onion and sauté for 3–4 minutes until softened.

  • Stir in garlic and mushrooms. Cook for 6–8 minutes until mushrooms are golden and any liquid has evaporated.

  • Add thyme, then pour in broth and heavy cream. Simmer for 5 minutes until the sauce thickens slightly.

  • Stir in Parmesan cheese and season with salt and black pepper.

  • Add the cooked pasta to the skillet, tossing to coat. Add a splash of reserved pasta water if needed to loosen the sauce.

  • Garnish with fresh parsley and serve hot.
