12 oz pasta (fettuccine, linguine, or penne)

2 tablespoons olive oil

2 tablespoons butter

1 medium onion, finely chopped

3 garlic cloves, minced

12 oz mushrooms (cremini, button, or mixed), sliced

1 teaspoon thyme (fresh or dried)

1 cup heavy cream

½ cup vegetable or chicken broth

½ cup grated Parmesan cheese

Salt and black pepper, to taste

Fresh parsley, chopped, for garnish
Instructions

Cook pasta according to package directions until al dente. Reserve ½ cup of pasta water, then drain and set aside.

In a large skillet, heat olive oil and butter over medium heat. Add onion and sauté for 3–4 minutes until softened.

Stir in garlic and mushrooms. Cook for 6–8 minutes until mushrooms are golden and any liquid has evaporated.

Add thyme, then pour in broth and heavy cream. Simmer for 5 minutes until the sauce thickens slightly.

Stir in Parmesan cheese and season with salt and black pepper.

Add the cooked pasta to the skillet, tossing to coat. Add a splash of reserved pasta water if needed to loosen the sauce.
