Ingredients

1 lb chicken breast or thighs, cut into chunks

2 cups sliced mushrooms

1 small onion, diced

2 garlic cloves, minced

¾ cup heavy cream (or Greek yogurt)

½ cup chicken broth

1 tbsp olive oil or butter

2 cups cooked rice (jasmine or basmati)

Salt, pepper, parsley to taste
Instructions

Season and sear chicken in a hot skillet with olive oil until browned and cooked. Remove and set aside.

In the same skillet, sauté onions and garlic. Add mushrooms and cook until browned.

Deglaze with broth, then stir in cream. Simmer until thickened.

Return chicken to skillet, mix in cooked rice, stir, and simmer for 2 minutes.
