Description

Decadent and delicious, this creamy mushroom chicken features golden seared chicken in a rich garlic mushroom sauce. It’s the kind of dish that feels fancy but is shockingly easy to make at home!


Ingredients

For the chicken:

  • Boneless chicken breasts or thighs 🍗

  • Olive oil & butter 🫒🧈

  • Garlic (minced) 🧄

  • Onion (diced) 🧅

  • Mushrooms (sliced, any kind) 🍄

  • Heavy cream or half-and-half 🥛

  • Chicken broth

  • Parmesan cheese (optional) 🧀

  • Thyme or parsley 🌿

  • Salt & pepper

Optional extras:

  • Spinach or peas 🌱

  • White wine for deglazing


Instructions

  • Season and sear chicken in oil and butter until golden and cooked through. Remove and set aside.

  • In the same skillet, sauté onion, garlic, and mushrooms until browned and tender.

  • Add broth and cream, scraping up any browned bits. Simmer to thicken.

  • Stir in cheese and herbs, then return chicken to the pan and spoon sauce over.

  • Serve hot over mashed potatoes, pasta, or rice, and garnish with fresh herbs.

Notes

Use a mix of mushrooms for deeper flavor. Add white wine for a fancy twist. This dish pairs perfectly with roasted veggies or garlic bread!
