Ingredients

2 boneless, skinless chicken breasts, cut in halves lengthwise

2 tbsp olive oil

2 tbsp unsalted butter

4 cloves garlic, minced

1 cup chicken broth

1/2 cup heavy cream

Juice of 1 lemon

1 tsp lemon zest

1/4 cup grated Parmesan cheese

Salt and pepper to taste

2 cups cooked white rice

Instructions

Season chicken with salt and pepper on both sides.

Heat olive oil in a large skillet over medium heat. Add chicken and sear for 4–5 minutes per side until golden and cooked through. Remove and set aside.

In the same skillet, melt butter. Add garlic and sauté for 30 seconds until fragrant.

Pour in chicken broth and bring to a simmer. Stir in lemon juice, zest, and cream. Simmer for 3–4 minutes.

Add Parmesan cheese and stir until the sauce thickens slightly.

Return chicken to the skillet and spoon the sauce over it. Let simmer for another 2–3 minutes.

Notes
