2 large boneless, skinless chicken breasts (halved horizontally into 4 cutlets)

3 garlic cloves, minced

1 small shallot or onion, finely chopped

1 cup chicken broth

1 cup heavy cream (or half-and-half for lighter)

2 tablespoons Dijon mustard

½ cup freshly grated Parmesan cheese (optional, for extra richness)

3 tablespoons fresh dill, chopped (plus more for garnish)

Season and sear chicken: Pat chicken dry and season with salt, pepper, and garlic powder. Heat olive oil in a large skillet over medium-high heat. Sear chicken cutlets for 4–5 minutes per side until golden and cooked through. Remove and set aside.

Cook aromatics: In the same skillet, melt butter. Add shallot and cook for 2–3 minutes until softened. Stir in garlic and cook for 30 seconds until fragrant.

Build the sauce: Pour in chicken broth, scraping up any browned bits from the pan. Stir in heavy cream, Dijon mustard, Parmesan (if using), and lemon juice. Simmer gently for 3–4 minutes until slightly thickened.
