  • 2 tbsp butter

  • 1 small onion, chopped

  • 2 carrots, peeled and diced

  • 2 celery stalks, diced

  • 2 cloves garlic, minced

  • 1/4 cup all-purpose flour

  • 4 cups chicken broth

  • 2 cups cooked shredded chicken

  • 1 cup milk or half-and-half

  • 1/2 cup heavy cream (optional for extra richness)

  • Salt and pepper to taste

  • 1/2 tsp dried thyme

  • Fresh parsley for garnish


Instructions

  • In a large pot, melt butter over medium heat. Add onion, carrots, and celery. Cook for 5–6 minutes until softened.

  • Add garlic and cook for another minute.

  • Sprinkle in flour and stir to coat vegetables. Cook for 1–2 minutes to form a roux.

  • Gradually pour in chicken broth, whisking constantly to avoid lumps.

  • Bring to a simmer and cook for 10 minutes until thickened.

  • Add cooked chicken, milk, cream, thyme, salt, and pepper. Simmer gently for 10 more minutes.

  • Taste and adjust seasoning. Serve hot, garnished with fresh parsley.
