Ingredients

2 tbsp butter

1 small onion, chopped

2 carrots, peeled and diced

2 celery stalks, diced

2 cloves garlic, minced

1/4 cup all-purpose flour

4 cups chicken broth

2 cups cooked shredded chicken

1 cup milk or half-and-half

1/2 cup heavy cream (optional for extra richness)

Salt and pepper to taste

1/2 tsp dried thyme

Fresh parsley for garnish
Instructions

In a large pot, melt butter over medium heat. Add onion, carrots, and celery. Cook for 5–6 minutes until softened.

Add garlic and cook for another minute.

Sprinkle in flour and stir to coat vegetables. Cook for 1–2 minutes to form a roux.

Gradually pour in chicken broth, whisking constantly to avoid lumps.

Bring to a simmer and cook for 10 minutes until thickened.

Add cooked chicken, milk, cream, thyme, salt, and pepper. Simmer gently for 10 more minutes.
