Description

A creamy and savory spaghetti dish made with tender chicken, earthy mushrooms, and a rich, silky sauce of cream, Parmesan, and herbs. A cozy and comforting meal for any occasion.


Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs

  • 12 oz spaghetti

  • 2 tbsp olive oil + 2 tbsp butter

  • 1 pound mushrooms, sliced

  • 3 cloves garlic, minced

  • ½ cup chicken broth

  • 1 cup heavy cream

  • ½ cup grated Parmesan cheese

  • Salt and pepper to taste

  • Fresh thyme for garnish (optional)


Instructions

  1. Cook spaghetti according to package instructions, reserving 1 cup of pasta water.

  2. Heat olive oil and butter in a skillet. Cook chicken until browned and cooked through, 5–6 minutes per side. Slice and set aside.

  3. In the same skillet, sauté mushrooms for 5–6 minutes until golden, then add garlic and cook for 1 more minute.

  4. Stir in chicken broth and cream, then simmer. Add Parmesan and season with salt and pepper.

  5. Toss in cooked spaghetti, chicken, and pasta water to coat.

  6. Garnish with fresh thyme and additional cheese. Serve immediately.

Notes

  • Add extra veggies like spinach, peas, or broccoli for more flavor

  • Use coconut cream or cashew cream for a dairy-free version

  • Great with garlic bread or a side salad
