Ingredients

1 lb boneless, skinless chicken breasts or thighs

12 oz spaghetti

2 tbsp olive oil + 2 tbsp butter

1 pound mushrooms, sliced

3 cloves garlic, minced

½ cup chicken broth

1 cup heavy cream
-
½ cup grated Parmesan cheese

Salt and pepper to taste

Fresh thyme for garnish (optional)
Instructions

Cook spaghetti according to package instructions, reserving 1 cup of pasta water.

Heat olive oil and butter in a skillet. Cook chicken until browned and cooked through, 5–6 minutes per side. Slice and set aside.

In the same skillet, sauté mushrooms for 5–6 minutes until golden, then add garlic and cook for 1 more minute.

Stir in chicken broth and cream, then simmer. Add Parmesan and season with salt and pepper.

Toss in cooked spaghetti, chicken, and pasta water to coat.

Garnish with fresh thyme and additional cheese. Serve immediately.
