Description

This creamy chicken curry features tender chicken, sweet bell peppers, and a rich spiced sauce served with fluffy white rice. Easy to make in one pan and full of cozy flavor.


Ingredients

  • lbs boneless chicken thighs or breasts, cut into chunks

  • 1 tbsp oil

  • 1 onion, diced

  • 3 garlic cloves, minced

  • 1½ tbsp curry powder

  • ½ tsp paprika

  • 1 tbsp tomato paste

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • ¾1 cup coconut milk or heavy cream

  • Salt and pepper to taste

  • Fresh parsley or cilantro, for garnish

  • 1 cup basmati or jasmine rice

  • 2 cups water

  • Pinch of salt


Instructions

  1. Rinse and cook rice with 2 cups water and a pinch of salt. Simmer 15 minutes, then rest and fluff.

  2. Sear chicken in oil, 4–5 minutes. Remove and set aside.

  3. Sauté onion and garlic until golden. Stir in spices and tomato paste.

  4. Add bell peppers and chicken, stir to coat.

  5. Pour in cream or coconut milk. Simmer 10–12 minutes until thickened.

  6. Garnish with herbs and serve with rice.
