Description

Creamy Cajun Chicken Pasta with Broccoli & Bell Peppers is a spicy, comforting one-skillet meal made with seasoned chicken, sautéed vegetables, and a rich cream sauce.


Ingredients

  • 12 oz pasta (fettuccine or penne)

  • 1 lb chicken breast, sliced

  • 1 tbsp Cajun seasoning

  • 1 tbsp olive oil

  • 1 tbsp butter

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 2 cups broccoli florets

  • 3 cloves garlic, minced

  • 1 cup heavy cream

  • 1/2 cup grated Parmesan cheese

  • Salt and black pepper to taste

  • 1/4 cup reserved pasta water

  • Chopped parsley (optional)

Instructions

  1. Cook pasta according to package; reserve 1/2 cup water.

  2. Season chicken with Cajun spice and a pinch of salt.

  3. Heat oil in skillet. Cook chicken 3–4 mins per side. Remove.

  4. In same pan, melt butter. Sauté peppers and broccoli 5 mins. Add garlic; cook 30 sec.

  5. Add cream and Parmesan. Simmer 2–3 mins until thickened.

  6. Add chicken and pasta. Toss with pasta water to loosen sauce.

  7. Adjust seasoning and garnish with parsley.

Notes
