  • 2 pounds ground beef (80/20 preferred)

  • 1 cup crushed Ritz crackers (about 24 crackers)

  • ½ cup finely chopped onion

  • ½ cup finely chopped green bell pepper

  • 4 ounces shredded sharp cheddar cheese

  • 2 large eggs

  • ½ cup milk

  • 1 teaspoon salt

  • ½ teaspoon black pepper

For the glaze:

  • ½ cup ketchup

  • ½ cup brown sugar

  • 1 teaspoon yellow mustard


Instructions

  • Preheat your oven to 350°F (175°C). Lightly grease a loaf pan or line a baking sheet with parchment paper.

  • In a large mixing bowl, combine the ground beef, crushed Ritz crackers, onion, bell pepper, shredded cheddar, eggs, milk, salt, and pepper. Mix gently until just combined.

  • Transfer the meat mixture to the prepared pan or shape into a loaf on the baking sheet.

  • Place in the oven and bake for 30 minutes.

  • While the meatloaf bakes, mix together the ketchup, brown sugar, and mustard in a small bowl to make the glaze.

  • After 30 minutes, remove the meatloaf from the oven and spread the glaze evenly over the top.

  • Return to the oven and bake for another 30–40 minutes, or until the internal temperature reaches 160°F (71°C).

  • Let the meatloaf rest for 10–15 minutes before slicing and serving.

Notes

  • Avoid overmixing the meat mixture to keep the loaf tender.

  • You can substitute ground turkey or chicken, but the texture will be slightly different.

  • Add a dash of Worcestershire sauce to the glaze for an extra flavor boost.

  • This recipe can be made gluten-free by using GF crackers and condiments.
