Description

Chipotle honey lime chicken is a flavor-packed dish that combines smoky heat, sweet honey, and tangy lime for the perfect balance. The marinade infuses the chicken with bold Southwestern-inspired flavors, while grilling or pan-searing caramelizes the honey for a delicious glaze. Juicy and tender, this chicken is versatile enough to serve with rice, roasted vegetables, tacos, or even on a fresh salad. It’s quick enough for busy weeknights but impressive enough for entertaining.

  • 1 ½ lbs (700 g) boneless, skinless chicken thighs or breasts

  • 3 tbsp honey

  • 2 tbsp chipotle peppers in adobo sauce, minced (with a bit of the sauce)

  • 2 tbsp olive oil

  • Juice and zest of 2 limes

  • 3 cloves garlic, minced

  • 1 tsp smoked paprika

  • 1 tsp ground cumin

  • ½ tsp chili powder

  • Salt and black pepper, to taste

  • Fresh cilantro, chopped (for garnish)


Instructions

  • In a mixing bowl, whisk together honey, chipotle peppers, olive oil, lime juice, lime zest, garlic, paprika, cumin, chili powder, salt, and pepper.

  • Add chicken to the marinade, coating well. Cover and refrigerate for at least 30 minutes (or up to 4 hours for deeper flavor).

  • Heat a grill pan or outdoor grill over medium-high heat. Lightly oil the grates.

  • Cook chicken for 5–6 minutes per side, or until caramelized and cooked through (internal temperature should reach 165°F/74°C).

  • Let chicken rest for 5 minutes before slicing.

 

  • Garnish with fresh cilantro and serve with lime wedges.
